Winner Winner Chicken Dinner!

I had a rough day with my little one at the hospital and I needed to add in a little more flavor today. 

I'm sick were all sick and my challenge is over in a couple days (down 6). I haven't been to the gym all week thanks to sickies. 

So here is what happened at dinner 🙈


I coated the boneless skinless chicken breast in cornmeal and flavorgod garlic seasoning and baked it at 400 for 25 minutes then I topped it with two slices of deli ham and one slice of lite Swiss cheese and baked it 5 more minutes. 


The veggies have fresh garlic and olive oil spray and were sautéed for 5 minutes over medium heat on the stove top. 


My white sweet potato chips were bakedfor 15 minutes at 400. I thinly sliced them then tossed them in a bowl of flavorgod everything seasoning and spray olive oil I then spread them out on a baking sheet. 


All in all healthy and extremely tasty oh my chicken dipping sauce is ff greek yogurt and yellow mustard because who doesn't love to dip?

Benihana's Ginger Dipping Sauce

I am a sucker for Benihana's like big time and so are my kids.  While pregnant with the twins I had to have weekly appointments at a special doctor out of town and wouldn't ya know it I had to pass by Benihana's to get there.  I am pretty sure I ate their every week which would explain their love for it.  It's nice because I can get them to eat all sorts of grilled chicken, shrimp, pork or steak with the sauces they love.
So I decided to try and recreate the ginger dipping sauce and make it as healthy as possible.  I also did the dressing, but that will be another post.

Half a yellow onion
1 tbsp fresh peeled ginger
Half the juice of a lemon
1 tsp minced garlic
1/4 cup of white vinegar
1/2 cup of low sodium soy or liquid aminos

Blend in a blender or food processor

Serves 4

Jalapeño Avocado Turkey Burger


Easy peasy and super tasty.  Ground turkey patted out with a little onion powder and pepper grilled up on the BBQ topped with yellow mustard, smashed avocado and pickled jalapeños.  Felt like a cheat meal, but was TOTALLY acceptable on challenge.  Yum yum eat right!

Low Calorie Salisbury Steak

1 lb of lean high quality ground beef
1 yellow onion 
1 clove garlic minced
1 package of sliced white mushrooms
1 tbsp steak seasoning
1 tbsp of flour 
1 cup of beef broth
spray olive oil
chives (optional)

Serves 4
approx calories 240


Sautée 3/4 of the onion it long strips in spray oil for 1 minute. Add mushrooms and garlic and sautée 4 more minutes.
Remove veggies from pan and set aside.


In a bowl combine beef, seasoning, and 1/4 onion diced. 


Make 4 hamburger patties. Spary the same pan with more olive oil cook patties over medium/high heat 2 minutes on each side. They will not be fully cooked, but that's okay. Remove them from the pan and set aside.

Add veggies back to the pan still over medium high heat add a pinch of flour and cost them then add the beef broth. Let simmer for a minute or so then add the patties to the gravy. Let everything simmer four more minutes. 

Top with chives if you desire.

Feeling Good

I jumped right back in on my challenge and am so glad. I really packed on some pounds over the last month between Cabo and the Holidays my eating was NOT on point. 

I am happy to announce that after only two days I have lost 4 pounds! I really had to kick myself into gear because the yummy food was seriously addicting, but I know that fueling my body right is so much healthier and will give me more energy. I mean seriously would you be hungry if you ate this much food every day?
Yes I really did meal prep on a Friday night with my favorite seasonings. #backontrack
