Well clearly y'all know I have an obsession with Mexican food, but my other obsession would be PIZZA! Here's my first attempt at cauliflower crust pizza. I will have to say I was VERY skeptical of this given how much I love pizza, but honestly it was WAY yummy. No joke, I wouldn't lie about pizza.
Ingredients:
1/3 head of cauliflower
1 egg
1/3 cup of parmesan cheese
1/4 cup Mozzarella cheese
Pinch of salt
1 tsp garlic powder
Place the raw cauliflower in the food processor and pulse it turning into into a rice consistency.
Place in a microwave safe bowl and microwave for 7 minutes. No need to add water or cover.
Let cool for about 5 minutes and place the mixture inside a thin kitchen towel or cheese cloth. Squeeze all the water. This step is important, keep squeezing to insure all the water is out.
Once the water is out you will be left with a dough type consistency.
Mix the dough with the remaining ingredients.
Roll out and place on a sprayed piece of wax paper on a baking sheet. Bake at 400 degrees for 10 minutes.
Top with whatever goodies you wish and bake for an additional 6 minutes. Mine had homemade pasta sauce, cheese, turkey pepperoni, zucchini, onions, olives, fresh tomato and basil added at the end.
