As a child my FAVORITE meal was tacos! Seriously gringo white girl tacos and yup still to this day, but I have adapted them to my heathy me a little.
In the old days this concoction would have been served inside corn tortillas which were deep fried half way so that they had a little crisp but were not hard and topped with mounds of sharp cheddar and real sour cream but today just .5 ounces of cheese and Greek yogurt. Small changes people! They make BIG results.
For the filling I ground up lean ground beef, usually there is no fat to drain from that but if there is drain it. I then added in a can of pinto beans which I actually smushed up before hand. You could use fat free Refried beans too but I was trying to be nice and clean. I added a packet of low sodium taco seasoning but could have totes made my own but just didn't. Lastly I added a cup of water and let it all cook down for 30 minutes.
This will forever and always be my favorite meal especially with those 4 black olives and home grown tomatoes. Don't forget the hot sauce!
