Stuffed Zucchini

Yes I would consider this one perfection!  I used up a bunch of stuff from the garden for this ground turkey stuffed zucchini masterpiece.


As a little girl my Grandma's house always had something cooking.  In the summer often times it was her simple yet delicious al pomodoro sauce.

Ingredients:

Al PomodoroSauce

2 lbs of tomatoes (any variety)
Half a white onion
1 tbsp olive oil
1 tbsp minced garlic
12 basil leaves
2 tsp salt

Stuffed Zucchini

2 Medium zucchini
1 Lb. ground turkey
1/4 white onion
1/4 bell pepper
1 tbsp minced garlic
5 basil leaves
Handful of parsley
Garlic powder
Salt
1/3 cup parmesan cheese
1 egg
Mozzarella cheese (topping)

Dice the onion, tomato, and basil.  Sauté the onion and garlic in the olive oil over medium heat for 3 minutes.  Add in all the other ingredients and cook down for about 30 minutes.  I make large batches of this sauce and freeze it for use throughout the year.


Cut the zucchini length wise and hollow out the seeds with a spoon.  Reserve the inside of one of them.
In a mixing bowl combine all ingredients including the insides of one zucchini.  
Stuff the zucchini with the mixture and bake for 45 min at 400 degrees.  Top with the al pomodoro sauce and a handful of mozzarella cheese and broil for one minute.

Boobie Talk

Lets talk some boobies!  I have been in a boobie dilemma.  BK (before kids) and before fat my boobs were eh big B's small C's but not saggy. They were ok.

Fast forward! 225 pounds I became a 40 DD while um those were big and nice, I was gigantic and unattractive so who cared if the boobs were big?

Then go ahead and add in pregnancy times 3 and some breastfeeding times 3 and I was left with deflated water balloons.  THEN I lose weight and they become yup just an ugly empty balloon.

While focusing on losing weight I watched it happening but kind of put it out of my mind. Well the last few months it has been hitting me more. Especially with me being around my goal and not being able to target something that bothers me.

So for those of you who messaged me privately NO I did NOT get a boobie job.  I got a good bra! A $55 padded bra, a false advertising bra!  Today I went and got another!  BOOM!

Victoria Secret makes some nice little numbers that while um NO the chi-chis are really not there, you can pretend and they make your clothes look better.  I was told today I am a 34 C and thats the size of my latest bra.

Do I want a boob job?  Yup over the moon give it to me now!  Was I planning to have one in October?  Yup!  But Spawn Maker made me think a little and now I am on the fence.  I mean with these bras my clothes look more like I want and no one actually sees them. Other then out of the shower at home or the gym oh and in a bathing oh and in workout clothes....bleh.

Yes I am self conscious and yes I would love to have one less thing to be self conscious about.  It's also a very big and SELFISH surgery and while I do feel deserving of it I have to think about it a lot lot lot more.  It's extremely hard for me to do something for me.  Surgeries I am fine with, been there done that, but being selfish and doing something for ONLY me.  Never gone there.

So for now bring on the false advertising bra!

Questbar Breakfast Pizza


1 strawberry cheesecake Questbar
2 tbsp non fat Greek yogurt 
3 strawberries

Microwave for 10 seconds

Roll out onto parchment paper on a baking sheet


Bake for 3 min at 380 degrees. Flip and cook one more minute

Let cool for a minute and top with yogurt and strawberries. YUM!

A Camping Vacation

When I first started this blog it was mostly to post pictures of food and my progress, well it has come to my attention that many of you enjoy seeing these cute little boy faces and what we do in our day to day life so… ask and you will receive! 

So here's a glimpse at what a mini vay-cay looks like for us.  We wanted to go to Santa Cruz to the Boardwalk and hang by a pool and beach.  So a hotel right?  Nah not for us we go "glamping" you know… glamorous camping in our trailer at a KOA campground with all sorts of things for the kids to do.  Saves a ton of money vs. a hotel and also it makes for some pretty cool memories for the boys.

Ahhhh the three boys that make my world go round and round and round…. Which leads to Spawn 2 thinking it was pretty cool to spin me round and round on this in the playground.
While we camp we eat camp food!  This would be their first wiener roast.  I will spare you my bad wiener roast jokes. #yourwelcome Did I have a hot dog?  Yup.  With some low calorie chili a fresh tomato and onion and no bun of course.

However, I guess it didn't really matter how well I ate because I feasted on this bad boy!  Yes the perfect s'more complete with peanut butter.  Sorry NOT sorry!

Sometimes while camping we at healthy.  Extra lean ground sirloin, zucchini straight from our garden at home and some potatoes tucked in which the leftovers were used for home fries in the morning.  I had to make up for the s'more some how.

Clearly Spawn 3 loves to take pictures.  I even bribed him with a push up pop and this is the best I got. Oh well it's better then nothing.

Spawn 2 and 3 totally shocked us by climbing to the top of these giant palm trees.  I can't get over how brave and independent my amazing twin munchkins have become.

This bouncy pillow gave us lots of "steps" for me and some great fun and exercise for the boys.  Love these things, but word of advice take caution when jumping off it to the ground the ground is much harder then my knees anticipated.
The last leg of our trip was spent at Gilroy Gardens again tickets from costco.com seemed the best way to go.  I was completely impressed with the cleanliness and beauty of the park.  However I think I ate one of the worst burgers ever (no outside food or drink allowed) and the height limitations seemed sort of off.  
Take for example this ride.  It went slowly in a circle yes seriously in a circle with no ups and downs or jumps and spawn 3 wasn't tall enough AND spawn 1 and 2 needed an adult.  So I am not sure what that was about.  I will also mention that this park in my opinion is geared at kids age 2-6 which was great for us but may not be for other families.

So spawn 3 just played instead.

This one was interesting, jump giant paddling ducks.  I got my workout in here and quickly realized I was best at steering us in circles.  Took me the full ride until I sort of got the hang of it.

All in all we had a great time.  This is our only family vacation of the Summer and it turned out pretty well with tons of memories made.

Outfit of the Day

Meet Maggie

Well we survived! Day and night 1 were a success with our new baby girl.



Miss Maggie Mae at 14 weeks, her first car ride.




So far no horror stories and the boys are absolutely IN LOVE with their new girl. They are helpful and want to play with her. 


She had NO potty accidents!
So far her and Phoenix are getting along well.
She is crazily in love with me and loves to cuddle with me and follows me around. 

For bedtime we out her crate in our room and quickly learned that she was NOT crate trained. She cried for almost a solid hour even with the crate covered. But after lots of ssshhhing and assuring her we were right there she slept ALL night. 

I'm pretty sure this great day 1 is just psyching me out for the terror that's about to happen, but so far so good.
