What's for Breakfast?

Breakfast! Early girl tomato straight from the garden topped with an ounce of fat free feta, tropical pepper and a little cilantro. Hard boiled egg with pepper and a half slice of whole grain bread with a smear of avocado.

Maintaining and Losing

So it's been a little over a month since my 24 day challenge ended and I just wanted to post a picture of my scale which not only shows I have been maintaining my weight but have actually lost more!!!!! 

These products and the challenge have seriously changed my life. Oh carbease and catalyst how I love you!  I could talk these products until I am blue in the face, not because I sell them but because THEY WORK! Never in my life did I think I could see numbers like these.

Crockpot Chile Verde

Slow cooker chile verde with spruced up black beans and cilantro lime brown rice. Not completely clean eating, but close.

4 lb lean pork roast
Large can of green enchilada sauce
Jar of green salsa
Dice the meat into chunks
Brown the meat for about 5 minutes with some onion powder and black pepper.
Place the meat in the crockpot 
I used half a jar of salsa because the kids were going to eat this, you could use it all if you prefer.
A whole can of the enchilada sauce 
Cook on low for 6-8 hours. This is great to eat all week long on salads, it also freezes well for quick mid week meals.

One can of black beans
8 grape tomatoes cut in half
1 jalapeño (ours came from our garden yahhhhooo!)
Handful of cilantro 

Cook down on stovetop for about 8 min 
Brown rice 
One lime 
Handful of cilantro

The Good Morning America Interview

Here it is guys, the much anticipated GMA post.  Had you asked me how it went after they left that day I would have said "amazing!" Ask me now and I have pits in my stomach.  

Let me admit one thing about myself.  I OVER ANALYZE like big time.  To the point where I can seriously work myself up. So at the the time I had yet to over analyze exactly what I said so I was on cloud nine and thought it went well.  But I sure as shit have now and my answers blew.  

A couple things threw me off, not that I am defending myself in anyway BUT they showed up an hour early.  Which meant I was getting ready with no spawn help and my nerves were already frazzled.  Spawn 3 decided in his nice clothes that he would explore our fire pit and the ashes inside.  Then the topper was that I was told the interview was mostly about ME and not as much about the app!  Wait say what?  I rehearsed more info about how online tools helped me and online support NOT my story. 

For the first segment we filmed me playing with the kids in our backyard.  Easy right?  Uhhhhh I thought so, but not so much.  Have you ever tried playing with your kids with cameras watching?  All the natural went out the window, because um I am NOT an actress and don't want to be.  Like should I be smiling?  Should I be talking?  So yup it became a tiny bit awkward.  

The topper was when all the spawn wanted to climb up the slide instead of slide down.  I'm standing there thinking "can I pull back on their shirts and get them down like I normally do?"  Then Spawn 2 picks up bark and begins throwing.  Totes something that happens EVERYDAY but WTF do you do while cameras are rolling?  I can't possible go all Mom monster voice on camera can I?  At this point Spawn 3 is screaming at Spawn 2 to put the bark down.  "Put it down Nooooowwwww!"  Yes Spawn 3 is loud and in charge.  So I had to go to spawn 2's side and do a half mommy voice.  All in all I am sure they will pick out the pleasant moments, however the bad ones may make for better TV.

Then came interview time.  The part I was dreading.  The part where I gave easy answers instead of heart felt real answers.  

For example I was asked in one word how do you feel now that you lost the weight?  My answer "happy!"  WTF thats not true!  That's not true AT ALL.  That is NOT how I feel about that.  I feel PROUD and ACCOMPLISHED!  Not freaking happy.  See?  You get it now?  Like I somehow just belted out the easy answers instead of the real ones.

Or how about this one… She asked me what clicked and made me love going to the gym?  Well my mind was still gearing it at online tools so I geared it towards support from online friends or something BUT um NOOOooooOOOOOoooo the real answer is "because once you see results it becomes addicting!" Because once I started seeing my body change I wanted to see it change more and more.

The other giant fail I guess is that I was expecting only to talk about the journey after kids when I used online tools so I was prepared to say on that journey I have lost 65 pounds well she asked me how much I had lost from my starting 225 and I said 80.  Well GREAT now all of America thinks I weigh 145 pounds when WE all know that I have worked my damn ass off to get down to that 135.  And speaking of that I never even mentioned how hard it really is and how you have to remain committed day in and day out.  Maybe I didn't get the chance, maybe I was still focusing on the online thing (dammit!) I never ever really mentioned that I want to inspire people and show them that if I can do it they can too! #canigetaredo?
The next part was to walk and talk more about the app.  This part went ok I think mostly because I didn't have to talk about myself as much.  However I will forever kick myself that I didn't wear a headband. 
And lastly they filmed me checking in with the app at my gym, that went fine because I didn't have to talk.

As of right now I have half a mind not to tell any of you people when this airs and instead take the following and pretend I said this: 

Making the decision to get healthy for my family was the best choice I ever made. YOU have to want it, nobody can do it for you, it's you and you alone. But once you reach your goal you will have you and you alone to be proud of.

You have to be ready to make the commitment to yourself day in and day out.  You have to be willing to be a little uncomfortable sometimes. And most of all remember that it will NOT be easy, but it will sure as heck will be worth it.

Protein Pancakes in Bed

Since Spawn Maker busted his ankle at softball and will be laid up awhile it was a pancake breakfast in bed kind of day. We spent most of the night in the ER. Pair that with the emotionally nervous night I had the night before and I can count the hours for 2 nights on one hand. But hey, there's no resting in Mommyhood!

For them regular, for me protein style.

I used 1 scoop of Met-Rx protein pancake mix and 1/3 cup of water (I use double what it says)

I topped it with 6 smushed up rasberries

Grand total is exactly 200 calories.

My egg has tropical black pepper salt on it. Uh yum!

What to Wear?

What will we be wearing tomorrow for my Good Morning America interview? Oh this! 

Thank you so much Paige from Cakeplate Botique in Napa for the gorgeous dress and bracelets, you and your store are  amazing. This is a Trina Turk denim dress in a size 2.

The spawn will be wearing these cute little outfits from Gap. 

Don't worry I am sure I will snap some pictures tomorrow of all the excitement, but for now I clean my house, like really can you imagine having your house on national TV? Then add to that practically puking with nervousness from what to say.


Good Morning America

So I just got off the phone with one of the producers from Good Morning America and pretty much fainted.

So As many of you know I was featured on Pact apps site awhile back. They did a blurb on my journey and shared some of my recipes and pictures. 

What is Pact App? It's an app that encourages making a fitness pact. For example you agree to check in at the gym or agree to log your food in my fitness pal and if you follow through, they pay you... if not they fine you. Obviously this came easy to me so I used the app daily and earned myself a little money.

Well fast forward to today and Pact is going to be featured for a segment on Good Morning America. They stumbled across my story on the Pact site and they want me and my little guys to be a part of the segment. 

So tomorrow in my house they will be filming the boys doing normal daily stuff and they will be interviewing me. 

I am a hot mess of emotion right now. Excited in a way but clearly nervous as shit and don't even get me started on the kids that desperately need haircuts and the front yard that needs attention. But none the less Um HELLO... Uh exciting!!! Now what to wear, oh crap what should the spawn wear?

Here's my OOTD from today and yes that's a size 2!

Mexican Style Flank Steak

On the menu, flank steak! What's it marinaded in? Oh beer!  Wait what? That's not clean, BUT it's good.

1 tbsp of garlic
2 tbsp Mrs. Dash fiesta lime
Juice of one lime 
1 corona lite (at least it's lite) 

Marinade overnight in a ziplock bag. You can make this on a grill pan or outdoor BBQ. I always go the BBQ route if possible

Our steak was about 2 lbs and it took about 20 min. Direct heat on each side for 5 min and indirect the other 5. It should also rest for about 10 min. So allow 30 minutes cooking time. 

I served it with 1.5 oz of mushed up avocado and some salsa verde.

Our First Trophies

The twin spawn have officially finished playing their first sport and thanks to their amazing #rockstar Daddy they did great and loved it, as did he. 

Safe to say the Mama's got some ball players on her hands. I love that we got them started young putting them on the right path to sports and fitness. They make me beam with pride.

We even gave it a go at some football conditioning, but quickly learned they are a little too young for that. 

And for good measure, some photos of my dudes enjoying summer and a yummy dinner out where I feasted on chicken lettuce wraps!

Snickerdoodle Shake

How about a cookie milkshake for breakfast?

It's a Snickerdoodle shake!  

I used half of a packet (29 grams) of Advocare's vanilla meal replacement shake
1 tbsp peanut butter
8 oz. water
4 ice cubes,
dash of cinnamon
1 tsp vanilla
7 grams of honey. 

Blend and enjoy your cookies for breakfast along with 14 grams of protein. 

Transformation Tuesday in a Different Way

Transformation Tuesday in a little different way. Featuring the lovies in my life.

Those babies right there were SO freaking wanted. So prayed for, so fought for, and if we are being honest here, very much paid for. 

Often times I am so down on myself and look around and think what the hell have you done? You have no job, you aren't really "good" at anything! But ya know what? I did that (along with spawn maker and a doctor)! 

When I set my mind to something I do it! I wanted to be a Mom and nothing would stop me or us for that matter, Spawn Maker was very supportive. it took us 5 years, 3 IVF cycles, 4 iui's, and 2 miscarriages but I NEVER gave up because when you want something bad enough you do not give up! 

Just like in my fitness journey there have been and still our set backs, (let's call them pizza and wine) but I didn't give up and I won't give up! Cause guess what? I AM good at something, not giving up!

Smokehouse Chicken

What's for dinner? This! Boom! 

4 oz. of boneless skinless chicken on the BBQ. I basted it with sugar free BBQ sauce. Topped it with one slice of lite Swiss, mushrooms cooked in garlic and some spray oil and then topped with the amazingness of a slice of Costco redi-cooked #bacon 🐽 We call this smokehouse and summer in our house! I served it with a little steamed broccoli. Enjoy!

Brown Rice Pancake

It's a brown rice pancake! Hey when you are limited on your complex carbs we improvise, that and I had some rice to use up.

I added lots of water and seriously cooked it like 6 min in the microwave. 

I weighed out 2 oz which is half a serving for me and around 100 calories. 

I put a little spary oil in a pan and cooked it on medium for 2 minutes on each side. Voila a clean carb with a whole new spin. 

You could serve this anyway you wish from adding fruit and agave nectar or placing sautéed spinach and a grilled piece of salmon on it.

In My Lunch Box Today

A typical day at work. Everything here and from Trader Joes and went into my lunch box for a day at the office. This is around 600 calories. Breakfast, snack, lunch, and another snack. It isn't fully "clean eating" but pretty darn close and was exactly what I needed to get my through my day.

Fridge Pickles

Fridge pickles! Change it up however you want. This is cucumber, red onion, carrots, garlic, dill and lots of vinegar. Let them soak for at least 24 hours. This is my fav to have on hand to grab when I need a snack. 

Be Prepared

Be prepared. There are not many options when it comes to eating healthy on the go. So bring those snacks and stick with the plan. ❤️

Burn Day Scramble

A burn day breakfast. 
1 egg
2 egg whites
5 green bell strips
Diced white onion 
5 pearl tomatoes
1.5 oz avocado
1 tbsp non fat Greek yogurt
