Avocado Vinegarette

I was allowed fat at dinner time tonight. This is the first time that has been allowed at dinner so my wheels were turning.

Lemon olive oil, avocado, vinegar, a touch of Splenda and mixed in my food processor. Um YES please.

Arugula and some other mixed greens tossed with the dressing some mushrooms pearl tomatoes and 4 oz of shrimp which was coated in lemon, garlic and paparika.

Yup homemade salad dressing WILL be a new staple in this house. Next up one made with Greek yogurt. Stay tuned!
