Egg Stuffed Avocado

Stuffed avocado! 


1 egg

1.5 oz avocado

5 pickled jalapeño rings diced 

4 pearl tomatoes 

Tbsp Greek yogurt 

Hot sauce 


I used the microwave for this one. Just put the egg and jalapeño in for one minute then stirred in the avocado after cooking. Um yum!

Day 24

That's a wrap! 14 inches gone and around 8 pounds! But most of all I feel amazing. I feel proud, I feel confident, I feel accomplished, energized, fueled, balanced and maybe just maybe a tiny bit attractive. This journey is not over, it's just the beginning. 

I fully intend to indulge today, but I also intend to jump right back in and fuel my body the right way and maybe even start a different challenge. Maybe a toning challenge. The possibilities are endless, but I deserve to make my health important not just for me, but for them. #24daychallenge #abettermeforthem

Day 23 Progress

It's day 23! What's exciting is I don't want it to end and I don't think it will. The way I feel, the changes in my body it's all so amazing. Never did I believe 23 days could make such a difference. So here's a little Friday motivation. That's more then 5" around my belly. That's triple baby belly bloat gone! Leaving me with the rattlesnake skin of death, but we won't go there. Beggers can't be choosers right? I got three babies out of the deal and had no intention of ever wearing a bikini, so it's all good! Happy Friday, happy pre-birthday, happy day 23!🎉 #24daychallenge

Transformation Tuesday

Down around 7 pounds on day 19!


Turkey Meatballs and Zucchini Noodles

I don't have one of those fancy spiral cutters so I opted for the cheese grater mode on my processor. This is 3 zucchini.

After they are cut I put them in a bowl to soak out some of the water. Optimal time would have been about an hour but I didn't have that kind of time.

This is half a bell pepper, half a white onion and a clove of garlic.

Mix the veggies in with a package of ground turkey. Add 2 tsp oregano and 2 tsp basil. (Substitute fresh if possible)

I made 2 oz. meatballs so we could easy calculate. Because of the veggies I weighed them out at 2.2 oz. Hey I want all my protein


Bake at 425 degrees for 15 min.


For my sauce I just added garlic, mushrooms, and fresh basil to an organic low sugar low salt tomato sauce and simmered down.


I cooked the zucchini for just a few minutes in a little spray oil to warm it and so it wouldn't be as crunchy.


These meatballs are by far the best I have made, going forward making meatballs WILL be something we do often. I actually like the lack of bread crumbs because they are not as dense.

Basil Vinegarette


Trader Joes seafood blend in the frozen section. 

A little spray oil, fresh garlic, and Mrs. dash garlic herb

7 basil leaves
tsp tsp fresh garlic 
2 tbsp red wine vinegar 
1 tbsp Greek yogurt
1 tsp lemon olive oil
Sprinkle of Splenda 
Squeeze of lemon

Blend!


serve with 4 oz. of the seafood on any greens, this is arugula.

Cucumber and Smoked Salmon

Lunch time! Day 18. Cucumber with 3 oz. of smoked salmon. For the sauce I used 2 tbs of Greek yogurt a squeeze of lemon and dry dill. I topped it with fresh chives and red onion. Happiness is feeling like you went out for appetizers in your own backyard.

What's in Spawn Makers lunch box? Oh just a meal replacement shake, Greek yogurt with strawberries, a brown rice / quinoa combo, a chicken salad with yogurt ranch, mini meat loaf, and cauliflower mashed potatoes! YES all of that! 😍 Mini measured out meatloaf is a new staple in our house along with cauli mash which I added a little yogurt to in this batch. 😍 You don't have to be hungry on challenge, just eat smart and PLAN ahead! 












Progress not Perfection

Yes I really have logged into my fitness pal 500 days in a row! 👏🎉 So .4 is my loss for the week. 🙈 I'm trying not to focus on it or let the scale rule me, but it does sometimes 😔 I am trying to focus on my non-scale victories #NSV like the fact that my body feels better, I think I may be toner, my mood is better, my energy is up, and all in all I know I am fueling my body properly. Happy Sunday!

Avocado Find

Have I mentioned I love avocado? Um well I do and for snack I got a full serving it. By far this is the best find yet and check out the ingredients! No preservatives and all nice clean ingredients. Not to mention less expensive then 5 #avocados and pretty convenient to scoop out and weigh my 3 ounces. And yes yes this too came from Trader Joes, where else?

Buffalo Chicken Wraps with Ranch Greek Yogurt

First step was making a relish type salad in so that I could be sure I got my veggies in.

Tomatos, celery, cucumber, green onion, chives, and cilantro. I topped it with a dash of franks red hot sauce and vinegar. I let it sit in the fridge for two hours. 



Next step was my Greek yogurt ranch sauce. I add onion powder, garlic powder, dry dill, and fresh minced chives. I also let that sit in the fridge. 

For my 4 oz. of chicken it was BBQed and brushed with just a little franks red hot while cooking.

I put the relish on the bottom, then my chicken topped with the 1 tbs ranch for each wrap, a drizzle of hot sauce and some chopped fresh herbs. 

Another heaven on a plate. 
(Note the calorie count includes 1.5 oz of avocado that was put on after the picture. This a a protein+veggie+fat meal, minus the avo for a protein+veggie meal or snack)

Avocado Vinegarette

I was allowed fat at dinner time tonight. This is the first time that has been allowed at dinner so my wheels were turning.

Lemon olive oil, avocado, vinegar, a touch of Splenda and mixed in my food processor. Um YES please.

Arugula and some other mixed greens tossed with the dressing some mushrooms pearl tomatoes and 4 oz of shrimp which was coated in lemon, garlic and paparika.

Yup homemade salad dressing WILL be a new staple in this house. Next up one made with Greek yogurt. Stay tuned!

Fiesta Chicken Scramble

Yes finally finally breakfast! On cleanse I did only shakes but today is a burn day.

For burn my biggest meal of the day is breakfast. A full serving of protein, veggies, and fat! Here is my Fiesta Chicken Scramble

So what's a girl to do with fat? Eat a real egg and guacamole! Oh and I get Greek yogurt too!

This is:

1 real egg
2 servings of eggs whites 
(Scramble together and set aside) 

2 oz of chicken with fiesta lime (cooked ahead) 
6 bell pepper strips
Diced white onion 
(Cook for 2 min in spray oil)

Add egg mixture and cook for two more minutes

Top with Mama's Guac
1.5 oz avocado
1 tbs greek yogurt
1 tbs salsa

Breakfast packed with everything you need to burn some fat! Get it!



Mother's Day Celebration

I have a confession. Yesterday (Mother's Day) was a little hard. Not that I was craving the actual food, but more craving having the celebration with food.


I wanted Brunch, to cheers, mimosas, ice cream, breakfast in bed, to go to a restaurant, deli sandwiches at the park you name it I really wanted it yesterday. 


I associated yesterday with being spoiled by food. And guess what? I stayed on track and maybe went to bed a little unsatisfied, but I survived. 


I didn't need bad food to celebrate. I had an omelet, a beautiful shrimp salad, and a bunless BBQ burger and it was just fine. I don't need food to celebrate anymore! 









Shrimp Cocktail Salad


Start with 4 oz. of cooked bay shrimp, the little guys. Watch for them when they are onsale and keep them in the freezer.

Add diced cucumber, I use the English. One whole diced tomatoe, a little minced red onion onion, a free sprigs of chopped fresh cilantro (I keep herb plants next to my kitchen sink,) and the juice of a lime.

I let everything sit in the fridge overnight to let the flavors meld. I would have added chopped jalapeño if I had it, but instead I topped it was Valentina hot sauce which actually was perfect after it was all mixed up because it reminded me of a Mexican style shrimp cocktail.

I was allowed a fat with this meal so obviously I made it avocado. You could dice or mash it and add it inside or omit it if you are not allowed it. So good hardly feels like you are on challenge.

Taco Night!

Extra lean ground beef, onions, a roasted tomato, and Mrs. Dash southwest chipotle.




Mustard Chicken & Asparagus


1/2 of a lemon, pepper, tbsp minced garlic, a couple sprigs of fresh thyme.

To crisp it up 425 for 10 min. Eating steamed veggies gets old fast. I'm all about trying to make your veggies fun and new. This one is actually stolen from my Grammy ❤️


Sautée mushrooms and onions in a little spary oil with minced garlic. I added in a little garlic flavored Mrs. Dash at the end. Keep it clean ;-)


This is NOT my chicken for dinner. BUT as a tip this is my Husbands chicken for his lunch with Mrs. Dash fiesta like flavor. Make ahead and save yourself a ton of time. The key to clean eating and succeeding on a challenge is planning ahead. Gettin stuck in an unprepared situation is how we end up in a drive thru line.

Our dinner chicken had Trader Joes 21 seasoning blend on it, and of course it's salt free.


For my sauce I deglazed my chicken pan with 1/4 of the lemon, 2 tbs of water, 1 tbs of Dijon mustard, fresh thyme, and fresh parsley. Um YES a mustard sauce while on challenge. #yourewelcome


This meal is around 150 calories NO JOKE and SO satisfying.
