This chicken was insanely delicious. This Mama always has a Trader Joe basil plant in my kitchen next to the sink. It's just my thing.
I had some chicken defrosting which I wasn't sure what I was going to make with it for dinner until the smell of basil caught me and I realized I had a bunch of pearl tomatoes that needed used up.
I made the bruschetta in the morning and stuck it in the fridge for the flavors to meld.
22 pearl tomatoes
1 kumato tomatoe
5 basil leaves
1 heaping teaspoon of minced garlic
S&P
Dice it all up and put in the fridge this will make two portions (one for myself and the Hubs, I didn't put any on the kids chicken) each serving is 26 calories. It would be #amazeballs on some fish too!
As for the chicken I covered it with TJs 21 seasoning salute This is a newbie for me and I'm loving it and it's salt free!
I put some spray oil in the pan and cooked the 4 oz chicken breasts a few minutes on each side.
I topped it with the bruschetta, 1 tbs of Parmesan cheese and a drizzle of my FAV TJs balsamic reduction glaze. Note this bad boy is found by the vinegar, BUT in needs to be in the fridge after it's open. And you're welcome because I ruined my first bottle I ever bought. And NO I do not work for TJs, just #love it! ❤️
Total calorie count is 175 calories. I served it with TJs white jasmine rice and used the bruschetta juices for my rice as well.
The kids loved the chicken and rice!
I also made these veggies and tossed in a few tbsp of balsamic light vinegarette dressing.
