Egg White Scramble

Yesterday I did amazing keep my day low carb, but my fat went off the hook sooooooo... Let's give it another shot and work on lowering the fat and upping the protein.

.5 cup egg whites - 50 cal
6 bell pepper strips - 8 cal
.25 oz of light cheese - 20 cal
1.5 oz ham - 45 calories

Sautée for a couple minutes then add the eggs and turn off heat. Top with the cheese and in true fitmama fashion don't forget the hot sauce!

Shrimp Pesto Flatbread

This one should have been saved for a meatless lent Friday, BUT I forgot to take a protein out this morning and shrimp thaws fast.

A pound of shrimp with spary oil, garlic, crushed red pepper flakes and some tropical pepper salt from TJs. I didn't fully cook the shrimp as it will cook more in the oven.

Bake a 90 calorie flat out wrap at 350 for 5 minutes.
I sprayed it with a little more spray oil to help my pesto spread easier.  I topped it with all these ingredients:

Then cooked for 5 more minutes! Insane yum-o-ness!!!!!

Happy

I remember when I first started blogging all I wanted was to be a Mom. I figured when I had babies everything would be happy, perfect, and all smiles. I would not want or need for much more then to be a Wife and a Mom and we would all live happily ever after. Fast forward three babies later and YES it is totally what I wanted and being a Mother and wife is amazing and exactly what I wanted. BUT I still found myself looking for some more happy. Looking to wake up each day with this gigantic smile on my face ready to leap out of bed and into life knowing I had done and had exactly what I wanted and couldn't ask for anything more.

Fast forward to some of what lead me to this journey. The journey where I figured oh I just want to lose 30 pounds by my 30th Birthday and then everything will be so perfect.

Fast forward to the ok, how about 50 pounds and everything will be so so so perfect!

Fast forward to the lets reach a "normal BMI" and then just then each day will be butterflies and flowers and chirpping birds.

But here is the thing... maybe I don't know exactly what happy is. Maybe happy isn't always looking for more or making my body better? I mean I get that having goals is a good thing, but what's wrong with just enjoying now and being happy with now?

What really is happy? And maybe ones definition is completely different then anothers. What if it was all my happy during all those moments?

Things will always be crazy, emotional, chaotic, and hectic. I will never be fully happy with my body. I may never leap out of bed so ecstatic for life. Maybe all along what I was missing was right in front of me. Maybe happy IS my imperfect body. Maybe happy IS the melted popsicle on the table. Maybe happy is the low balance checking account alert. Maybe happy IS laughing littles on the trampoline while we BBQ in the backyard listening to country music. Maybe happy IS the floor that needs swept. Maybe happy IS cheering kids as my tired, hard working Husband enters the front door. Maybe happy IS a bootie grab in the kitchen, a good night kiss and a thank you for caring for the kidstoday. Maybe happy IS bathtime and clean babies. Maybe happy IS all this normal, everyday stuff right here that I love so so so so very much.

Today right now I am choosing to make my own happy and it will probably include loving my body a little more just as it is, a couple more splurge meals, over due library books, family gatherings, a rushed visit to the gym interrupted by a poop diaper, twins crying over what PJs they can't find, a scramble to log, cook and take a picture of my healthy dinner and the occassional quiet time with my Husband after the storm of the day has settled.

Because I am choosing to make my own happy! #abettermeforthem

In My Lunch Box

Failing to plan is planning to fail! I work tomorrow! (happy dance💃) It has been three weeks! Which also means it has been 3 weeks I have been with my spawn pretty much non-stop. Mama had a #meltdown today full on #psychomom I NEED my work break I need #Thursdaydressupday I need adult conversation. I need to feel appreciated and human. Anyways you get it! #mommybreak

Sooooooo here is my food for work. I try to pack around 600 calories, this load has 34 grams of protein. Yes the plan is to squeeze that lime all over those cucumber then top it with that Trader Joe Chili and Garlic Smoked sea salt! The salt will also go on that popcorn and half those tomatoes will go in the cottage cheese and the other half will go with the lemon pepper tuna. The clam chowder will be devoured around 10 am I am sure. And HELLO chocolate almonds!

Sooooo as you can see I will NOT be hungry tomorrow. The better you plan the bigger bang for the calorie. Plan it out people! 18 hours and counting until my break. 👍😬

Bruschetta Chicken ala Mama

This chicken was insanely delicious. This Mama always has a Trader Joe basil plant in my kitchen next to the sink. It's just my thing.

I had some chicken defrosting which I wasn't sure what I was going to make with it for dinner until the smell of basil caught me and I realized I had a bunch of pearl tomatoes that needed used up.

I made the bruschetta in the morning and stuck it in the fridge for the flavors to meld.

22 pearl tomatoes
1 kumato tomatoe
5 basil leaves
1 heaping teaspoon of minced garlic
S&P

Dice it all up and put in the fridge this will make two portions (one for myself and the Hubs, I didn't put any on the kids chicken) each serving is 26 calories. It would be #amazeballs on some fish too!

As for the chicken I covered it with TJs 21 seasoning salute This is a newbie for me and I'm loving it and it's salt free!

put some spray oil in the pan and cooked the 4 oz chicken breasts a few minutes on each side.

I topped it with the bruschetta, 1 tbs of Parmesan cheese and a drizzle of my FAV TJs balsamic reduction glaze. Note this bad boy is found by the vinegar, BUT in needs to be in the fridge after it's open. And you're welcome because I ruined my first bottle I ever bought. And NO I do not work for TJs, just #love it! ❤️

Total calorie count is 175 calories. I served it with TJs white jasmine rice and used the bruschetta juices for my rice as well.

The kids loved the chicken and rice!

I also made these veggies and tossed in a few tbsp of balsamic light vinegarette dressing.

😍 enjoy!!!! Nom nom!! #fitmamaskitchen

Bondi Band

No I am not just being a douche! It's flex Friday people!
I haven't washed my hair in three days. Yes no lie. I was going to wash it this morning BUT it's my Grandma's 80th birthday and we are having a party for her and I want to get dolled up tonight.

So I figured screw it (yes screw I'm working on the language.) I pulled out one of the Bondi Bands I have been waning to try that they sent me to review.

It was EXACTLY what I needed for today. It covered up way more of my greasy dirty hair and you can easily roll it down or back up for lots of coverage.

A new love! They sent it to me in black and hot pink! Soooo me!!! Check them out www.bondibands.com
