Ham and Egg Muffin

For this little treat I preheated my oven to 375 degrees.  I lined a muffin tin with 1 oz. of deli ham then poured in 1/4 of egg substitute.  I then topped it with some cracked pepper and dill, but any herb would work.  Next time I will use basil and serve with tomatoes and maybe even some cottage cheese.

I baked it for about 10 minutes and the result was DELISH!  The muffin is just 60 calories and the whole meal is 140 calories and 15 grams of protein.
